Dior Saint-Tropez
A Quintessence of Culinary Arts

Set in a Saint Tropez garden, the Monsieur Dior restaurant and Le Café Dior by Mauro Colagreco exalt the French Riviera's sunny, gentle living. Here, the triple-starred chef reinterprets Christian Dior’s attachment to Provence, in poetic menus where ingredients and colours dialogue with the southern landscapes. With its subtle décor, this enchanting port of call embodies the Côte d’Azur’s unique spirit.

Chef Mauro Colagreco
Promoting a circular gastronomy that respects the planet and nature’s needs, Mauro Colagreco strives each day to contribute, as best he can and on his own scale, to the environmental transition.
In 2006, only 20 years ago, ceaselessly transcending conventions and borders, he founded the restaurant Mirazur with his family, very close to Italy, in Menton: a three-Michelin-starred restaurant, voted the world’s best restaurant in 2019* (by The World’s 50 Best Restaurants). Embodied in this unspoilt estate, which is over 22 hectares and dedicated to permaculture and biodynamic gardens, is his philosophy of life, in total harmony with nature.
The cuisine is inspired by this and reflects the chef’s love for the region. Plant-based and ever-evolving, it follows the seasons and the cycles of the moon. In 2020, Mirazur became the first restaurant to obtain the highly demanding Plastic Free Certification, crowning many years of effort and research to eradicate single-use plastic from its kitchens.
His passionate commitment to the planet and the oceans was recognised by UNESCO, which, in 2022, invited him to become a Goodwill Ambassador for Biodiversity. The following year, Mauro Colagreco was made a Knight of the Legion of Honour and appointed Vice-President of Chefs at the Relais & Châteaux association. These significant and complementary roles are a natural extension of his work towards sustainable gastronomy and his daily involvement in safeguarding the world’s culinary heritage.
The chef also lectures at Harvard University on the cosmic influences on gastronomy and non-alcoholic gourmet beverages.
Today, at the helm of several establishments – in London, Tokyo, Hong Kong, Bangkok, Palm Beach and Buenos Aires – where he shares his convictions and is driven by a constant desire to learn, Mauro Colagreco pursues his dreams by systematically placing his concerns for our planet at the heart of his creations.
*According to the World’s 50 Best Restaurants ranking.
"With Monsieur Dior in Saint-Tropez, we sought to capture the spirit of the House of Dior and the legacy of Christian Dior: his absolute love of gardens, which he considered a relentless source of inspiration, almost like an inner sanctuary. For him, nature – far from being merely ornamental – became structure, sensation and architecture.
Our cuisine draws inspiration, of course, from nature – a constant and ever-changing entity that transforms into a language that is both free and precise – and from the lines, volumes and colours of the House’s emblematic dresses, but also, and above all, by Provence and its incredibly unique light. Something akin to the poetry of the Mediterranean, in all its beauty.
I also aimed for the kind of elegance that adhered to the essence of Monsieur Dior... focusing on the details, seasons and precision of the gesture. Our restaurant has become a stroll in the sunshine, between sea and garden, couture and cuisine, memory and emotion."
